• 08 Methode Traditionelle Chardonnay ZD

  An aperitif style sparkling wine made by the authentic Champagne process. The lightness and clarity of fruit characters make this an excellent palate cleanser. The wine has zero dosage (ZD) which enhances its enjoyment as an ideal partner to any hors d'oeuvres, but especially oysters.

• 08 Methode Traditionelle Chardonnay/Pinot noir ZD

  Made from 65% Chardonnay grapes and 35% Pinot noir grapes. A slightly fuller style with typical pinot noir richness and berry fruit characters. Gentle handling of fruit has produced with low levels of phenolics allowing a ZD style.

• 08 Methode Traditionelle Rose, 5g/L dosage

  A very attractive pink sparkling wine made by blending an additional quantity of Pinot noir red wine with our base wine. A very low level of residual sugar has created a wine that can be enjoyed at any time, with most foods.

  White Wines

  • 06 Chardonnay Wild Fermentation

    Peach and melon flavours combine with subtle oak characters to produce a satisfying wine. Indigenous yeast from the vineyard give extra complexity.

  • 05 Semillon

    Ready for immediate enjoyment or the cellar. Distinct lemon and lime aromas combine with a fresh acid finish. Recommended for all seafood dishes.

  • 07 Melange Blanc Semillon/Verdelho

    A clean and easy drinking wine produced from Verdelho and Semillon grapes grown in the lower Hunter Valley. Basket pressing and gentle handling of fruit enhance the tropical fruit flavours and soft finish.

  • NV Liqueur Chardonnay

    Extra-ripe Chardonnay grapes have been gently handled to preserve fruit aromas. This luscious wine is best enjoyed with desserts or coffee.

    • 07 Shiraz

      A full bodied Shiraz displaying plum and red berry flavours balanced by persistent tannins. Great drinking now, but will repay cellaring.

    • 08 Petit Verdot

      A vibrant red wine produced from this rare variety grown in the Upper Hunter Valley. Aromas of violets and berries are enhanced by maturation in French oak barrels. A rich and satisfying dry red table wine.

    • NV Liqueur Shiraz

      Extra-ripe shiraz grapes were partially fermented and then fortified with wood-aged brandy. Oak maturation has produced a soft, medium bodied, sweet red wine.
