Processed by hand

Our wines are completely processed by hand. The attention to detail is shown by the delicacy and clarity of the aromas. 

Our range of sparkling wines is made by the authentic Méthode Traditionelle.

By careful pressing in our stainless steel basket press we achieve a softness which allows our wine to enjoyed without the addition of high sugar concentrations at disgorging. Our wines are always sold within two months of disgorging, this ensures the freshness is preserved. 


What, no cork?

The best sparkling wines are delicate and are often damaged by the traditional cork closure.

Sealing our sparkling wines with a crown seal eliminates the problems associated with cork including: 

  • le goût de bouchon – the mouldy smell called cork taint.
  • le goût de bois – a woody taste.
  • le goût de colle - glue taint
  • loss of gas pressure

Since 2006 we have eliminated cork from our table wine range as well. We believe that in the same way that consumers have embraced the screwcap on table wines, they will eventually be convinced of the superiority of the crown seal on sparkling wines.


Understanding Our Label

Our cuvée number has letters followed by  a four digit number. The letters indicate the grape varieties, the first two numbers indicates the vintage year. The next two numbers are the number of months the wine spent on lees in the bottle before disgorging.

CURRENT RELEASES

2009 SÉMILLON
MÉTHODE TRADITIONELLE  ZD 9/108

The re-release of our ever popular Sémillon sparkling wine.  The wine benefits from more than 9 years yeast lees contact before disgorging.  This is wine for the sparkling wine experts, who can appreciate the complexity and nuances of a special sparkling wine. In this wine you see the traditional aged characters of Hunter Valley. Our sémillon is grown for us by Ken Bray, one of the Hunter Valley's sémillon finest growers. In this wine you will see the aged Hunter sémillon aromas with the overlay of yeast autolysis characters.

2017 CHARDONNAY, Blanc de blanc
MÉTHODE TRADITIONELLE  ZD 17/13

An excellent aperitif style made from 100% Chardonnay.  This traditional style is clean, complex and refreshing.  The current release is from the excellent 2017 with fruit sourced from Orange.   The “ZD” stands for Zero Dosage.  The 2017 vintage produced wine with excellent natural balance.  We believe this wine is so fine it needs no addition of sugar at disgorging. It is very unusual to find MT wine in Australia.

2016 CHARDONNAY/PINOT NOIR
MÉTHODE TRADITIONELLE  ZD 16/29

Produced with a little more Pinot noir than previous vintages.   The palate length is enhanced by the inclusion of 65% pinot noir.  Well developed autolytic characters give a wonderful creamy palate which compliments the red fruit flavours from the Pinot noir.  A constant favourite in our Méthode Traditionelle range.

2016 ROSÉ
MÉTHODE TRADITIONELLE  DOSAGE: 5G/L 16/29

The wine is a pale pink with just a hint of sweetness.  The red wine component lifts the red fruit aromas and gives a slight smokiness to this complex méthode traditionelle wine.  We blend a little wood matured pinot noir red wine with our Chardonnay/Pinot noir tank fermented base wine before bottling the wine for the secondary fermentation. This wine is an ideal match for salmon dishes. A wine that seems to suit all palates!

2016 CHARDONNAY/PINOT NOIR
MÉTHODE TRADITIONELLE  DOUX 16/29

A sweeter style made from Chardonnay and Pinot noir grapes.  Doux means soft.  Another description for this style is “Demi sec”.  Doux wines are more popular in France than in Australia.  This addition to our list shows another way to enjoy sparkling wines.  We enjoy the Doux with sweet biscuits and cakes at high tea!

2016 TUMBARUMBA PINOT NOIR                      

Our first release of Pinot noir grown in the cool climate of Tumbarumba - the western foothills of the Snowy Mountains.  We have employed a range of traditional techniques inspired by the winemaking of Anne's ancestral home of Burgundy.  The brilliant robe anticipates the heady perfume of the fruit.  The texture of the wine is perhaps the best aspect of the wine.

2016 MUDGEE SHIRAZ                      

An intense shiraz typical of the Mudgee area.  Made in our traditional manner: open fermentation, hand plunged and oak matured.  A dark and brooding wine with rich, smooth tannins.  Aromas of black fruits are enhanced by a suggestion of regional mint/eucalypt characters.  A very satisfying with a long life ahead.

2017 Pokolbin shiraz                      

Fruit was sourced from a premium Pokolbin vineyard, well known for the structure of their wines. The volcanic clay soils no doubt play their part. The 2017 red vintage in the Hunter valley will be regarded as equal to the great 2014 vintage, which was itself compared to 1965! The wine displays a rich and full palate of red fruits and integrated French oak. Like all great Hunter shiraz, cellaring will allow the development regional characters.

2017 branxton shiraz                      

We consider this wine to be the best shiraz from our shiraz vines planted in 1993. The vines now give excellent grapes in terms of fruit expression and tannin ripeness. We expend many hours manually manipulating the vines to ensure every berry is perfectly and uniformly ripe. You should consider a comparison with the Pokolbin shiraz. Intriguingly, the grapes were picked 2 days apart and lab tests show they had virtually identical sugars and acids. The wines have developed quite different characters. The Branxton shiraz is deeper, more complex with a hint of a floral perfume. A very satisfying wine.

2017 CABERNET SAUVIGNON                  

One for the cellar. A clearly varietal cabernet sauvignon showing black berries, a slight minty character on the nose enhanced by maturation in quality French oak.  Fruit sourced from an unirrigated vineyard in Mudgee NSW has produced a wine with depth of flavour and structure which will repay cellaring for at least 5 years.

WHITE WINES

2017 riesling                   

Our latest release of this variety. Fruit was sourced from an old vineyard in the Lower Hunter Valley. The fruit was quickly processed in our winery to preserve the delicate characters of this classic variety. The wine was cool fermented in stainless steel tanks with Alsatian yeast strains to release the aromatic potential of the grapes. The finished wine is clean and fresh and shows floral and citrus aromas. The palate is typical of riesling wines and has a long persistence.  A delicate, restrained and satisfying style.  The wine is an ideal accompaniment to all seafood and white meat dishes.

2015 MÉLANGE BLANC                    

Ripe verdelho and riesling grapes were harvested by hand in early February, 2015. Gentle handling, and the use of our traditional basket press has produced a full-flavoured white wine with a soft palate. No wood maturation is used in the production of this wine allowing the fruit characters to be dominant. Our Mélange Blanc is a wine for immediate consumption, with or without a meal.

2018 chardonnay                  

An elegant cool climate wine made from fruit sourced from Tumbarumba.  Matured in delicate French oak, the wine has ripe melon and white peach flavours with spicy French oak nuances.  Definitely not the “old fashioned Australian” chardonnay style.  Do not serve too cold.  Enjoy the wine with poultry or other white meats. Our favuorite match is potato and leek soup!

2017 Sauvignon blanc              

A textural, riper style of Sauvignon.  Made using high altitude Orange district fruit.  A slightly riper style than 2016.  The wine has ripe fruit flavours of stone fruit and passionfruit and has a crisp line of acidity.  Our winemaking is designed to let the fruit characters dominate but for the wine to display body and viscosity.  Can you pick the subtle contribution of partial oak maturation?
